Chappallet Mountain Cuvée

Chappallet Mountain Cuvée is my choice to accompany the heartier dishes prepared by our culinary team. For instance, the umami of Chef Deshayes' morel mushroom sauce is enhanced by the hints of currant, sage and thyme that the wine provides.
Terradora di Paola Falanghina

When seafood is on the menu, I often recommend Terradora di Paola Falanghina. This Italian varietal has crisp acidity to contrast creamy dishes and a round, fruit forward mouthfeel with green apple and citrus notes that doesn’t overpower more delicate fish.
François Montand Blanc de Blancs
Varietal: Sparkling Wine, Blanc de Blancs

When the occasion calls for bubbles, many people aren’t aware of the variety available to them. Larger producers such as Dom Perignon and Moet & Chandon are top of mind with a deserved reputation of quality. However, our house sparkling wine from François Montand is a Blanc de Blancs made in the same Méthode Champenoise and offers great quality and greater value.
Bishop Cocktail

If you want to celebrate Wine Day but you’re not “into” wine, try a wine based cocktail. A classic from the Waldorf Astoria circa 1935, the Bishop Cocktail combines 3 oz of white rum with 1 oz of red wine, simple syrup for sweetness and fresh lime juice for balance.
